Corned Beef and Cabbage

Amazingly, I was the worst Irish girl...I never even ate corned beef until I met my husband. He taught me how to make this delicious meal, and like a good lass, I perfected it.

What you'll need:

1-2 Corned Beef briskets (if you cook 2, cook them in separate pots)
1 head of green cabbage
5 nice big carrots
3 parsnips
10 red potatoes

Fill a soup pot with water, add the meat and the spice pack that comes with the beef. Boil on medium for about 5 hours. The meat will be easily torn with a fork when ready. Cube the potatoes and slice the parsnips and carrots. The cabbage cut in half length wise, then cut the 2 halves length wise again in 1-2 inch strips. Discard the bottom know of the cabbage. Put all the veggies in a pot, boil for about 35 min. Remove meat and slice in healthy pieces. Drain the stock, scoop the veggies out. Place the meat and veggies on a large platter with the meat in the center. Serve with Irish soda bread. **Real soda bread is made with currants, not raisins**

Baked Spaghetti

*Please note, this is a comfort food, not the best for your waistline...but for sure, you will be glad you ate it!*

What you will need

1 lb of pasta...any kind, I use Angel Hair
1/2 lb jack cheese shredded
1/2 lb med-sharp cheddar shredded
2 cups spinach
1 can tomatoes
1 jar of fav pasta sauce
1/2 lb ground beef
5-6 sweet or hot Italian sausages
1 onion
2 cloves garlic

Preheat oven to 375. Mince onions and garlic, brown in a pan with ground beef. removes sausage from its casings and brown with beef, drain. In a soup pot, combine sauce, tomatoes, browned meat and spinach. Simmer until the spinach is cooked. In a baking dish combine sauce, cooked pasta, and shredded cheese making sure you save some cheese to sprinkle on top. Place in the oven for 35 min. Serve with salad and garlic bread.
